Lunch

...tasted so good today.

I waited a long time to eat ... almost too long. (You darn bloggers - the time just flies while I read your stuff!) So I was hungry.

Best Foods has a new, light mayo-type dressing out - 25 calories a tablespoon! (Happy dance!)

1 can tuna + some of that mayo + finely chopped onion + LOTS of celery + two slices of bread = ahhhh.

Most of my day's calories, too.

There was a time when I wouldn't have made such a fine lunch for myself. I was so depressed the idea of dragging out the celery and chopping it would've defeated me. Even opening the can of tuna would have seemed like a chore. Those were not great days.

Now, making just what I want for lunch is a treat, and a duty. I need to eat. I need good food, nourishing, wholesome eats which will give me energy and make me strong and treat me by being good and savory. I'm so glad I don't have those dreary days so often any more.

So, there you have it: I just blogged a tuna sandwich. What do I win?
